Chicken Arugula Salad with Lemon Soy Sauce | Vegas Bod Ready

I’m heading out to WPPI in a few days….and I’ve been eating healthy all week to get vegas bod ready. (Well, sort of, besides that one incident with the pound cake, but lets not talk about that.) Well in the course of eating healthy I discovered how much I like Arugula and I crafted up this simple salad that is oh so yummy.

Ingredients
Arugula
Chicken Tenders or Breast
Crumbled Feta Cheese
Soy Sauce
Lemon
Butter
Instructions
1. Melt butter in frying pan. I use about 1/4 to 1/2 a tablespoon.
2. Turn down heat half 1/2 way. Add Chicken to frying pan. Brown on 1 side for about 30 seconds. Add soy sauce to your desire. (I add about 3 tablespoons.)
3. Squeeze in a 1/4 of lemon juice.
4. Turn Chicken over, brown for 30 seconds and drizzle excess sauce over your Arugula.
5. Continue to cook Chicken on low heat until done. If you are using Chicken tenders it will probably be about 5-7 minutes.
6. Place Chicken Tenders on top of Arugula and top with Feta Cheese.
